Very often, yes. Developer layouts tend to be chosen for cost rather than how a family really uses the room. Swapping base cupboards for deep drawers, taking the wall units up to the ceiling and reworking the run usually adds a lot of usable storage without a wall being touched.
None that is unusual. Walls out of square, sloping floors and deep reveals come with the older village properties, which is why the room is measured as it stands and the fitters scribe units to the wall rather than leaving a gap hidden behind trim.
